Instructions
 

  • Gather all your ingredients to ensure a smooth cooking process.
  • Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes. Season with salt and pepper.
  • Transfer the beef mixture to the crockpot. Add diced tomatoes, kidney beans, black beans, corn, taco seasoning, and beef broth. Stir well to combine.
  • Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooking time is up, stir the mixture and taste. Adjust seasoning if necessary.
  • Serve the beef mixture in bowls, topped with shredded cheese and chopped cilantro.
