Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix buttermilk, egg, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of batter for each pancake and cook until bubbles form, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  • For the berry compote, combine mixed berries, sugar, lemon juice, and vanilla extract in a saucepan over medium heat. Stir gently until the berries break down, about 5-7 minutes.
  • In a bowl, mash the ripe avocados with lemon juice, salt, and pepper until smooth.
  • Toast the whole-grain bread until golden brown. Spread the avocado mixture on each slice and sprinkle with red pepper flakes if desired.
  • Serve the pancakes topped with warm berry compote alongside the avocado toast.
