Buffalo Cauliflower Bites
  • 1 head Cauliflower Cut into florets.
  • 1 cup All-purpose flour For the batter.

Method
 

  1. Preheat your oven to 350°F (175°C) for the nachos and spinach dip, and 425°F (220°C) for the cauliflower bites.
  2. For Loaded Nachos: Spread tortilla chips on a baking sheet, layer with cheddar cheese, black beans, jalapeños, and diced tomatoes. Bake for about 10 minutes until cheese is melted.
  3. For Buffalo Cauliflower Bites: In a bowl, whisk together flour, water, garlic powder, paprika, and salt. Dip cauliflower florets in the batter and place on a lined baking sheet. Bake for 20 minutes, flipping halfway through.
  4. Toss baked cauliflower in buffalo sauce and return to the oven for an additional 10 minutes.
  5. For Spinach and Artichoke Dip: In a bowl, mix thawed spinach, chopped artichoke hearts, cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, garlic powder, salt, and pepper. Transfer to a baking dish and bake for 25-30 minutes until hot and bubbly.
  6. Serve all snacks hot with appropriate dips and garnishes.
