Ingredients
  

  • 4 small chicken breasts about 1 1/4 pounds
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 1 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • Tzatziki sauce homemade or store-bought

  • Medium bowl for marinating

Method
 

  1. In a medium bowl, whisk together olive oil and lemon juice. Season with salt and pepper to create the marinade.
  2. Place chicken breasts in the marinade, coating thoroughly. Let marinate at room temperature for 30 minutes or refrigerate for up to 2 hours.
  3. Cook the marinated chicken using your preferred method: grill for 6-8 minutes per side, pan-sear for 5-7 minutes per side, or bake at 400 degrees F (200 degrees C) for 20-25 minutes until internal temperature reaches 165 degrees F (74 degrees C).
  4. Remove chicken from heat and let rest for 5-10 minutes before slicing against the grain.
  5. To assemble, divide cooked rice or quinoa among serving bowls.
  6. Top with shredded romaine, grape tomatoes, diced cucumber, and sliced red onion.
  7. Arrange sliced chicken over the vegetables.
  8. Sprinkle with crumbled feta cheese and drizzle generously with tzatziki sauce.

Notes

Store components separately in the refrigerator for up to 4 days. Great for meal prep.
