- In a medium bowl, whisk together olive oil and lemon juice. Season with salt and pepper to create the marinade.
- Place chicken breasts in the marinade, coating thoroughly. Let marinate at room temperature for 30 minutes or refrigerate for up to 2 hours.
- Cook the marinated chicken using your preferred method: grill for 6-8 minutes per side, pan-sear for 5-7 minutes per side, or bake at 400 degrees F (200 degrees C) for 20-25 minutes until internal temperature reaches 165 degrees F (74 degrees C).
- Remove chicken from heat and let rest for 5-10 minutes before slicing against the grain.
- To assemble, divide cooked rice or quinoa among serving bowls.
- Top with shredded romaine, grape tomatoes, diced cucumber, and sliced red onion.
- Arrange sliced chicken over the vegetables.
- Sprinkle with crumbled feta cheese and drizzle generously with tzatziki sauce.
