Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning or a mix of basil, oregano, and thyme
  • salt and freshly ground black pepper to taste
  • 8 oz fresh mozzarella cheese sliced
  • 2 ripe tomatoes sliced
  • fresh basil leaves thinly sliced or chopped
  • balsamic glaze or reduction for drizzling

Method
 

  1. Preheat grill to medium-high heat for proper searing.
  2. In a small bowl, mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush mixture over chicken breasts on both sides.
  3. Place chicken on grill and cook 6–7 minutes per side, or until internal temperature reaches 165°F (75°C).
  4. In last 2 minutes of grilling, top each chicken breast with mozzarella and tomato slices. Close grill lid to melt cheese.
  5. Remove chicken from grill, place on serving plate, sprinkle with basil, and drizzle with balsamic glaze before serving.

Notes

Always preheat grill for best sear. Use ripe tomatoes and fresh mozzarella for authentic flavor. Rest chicken for a few minutes before serving to lock in juices.
