Ingredients
  

  • 1 lb cooked chicken shredded (rotisserie works great)
  • 1/2 cup sugar-free BBQ sauce 2g carbs or less per serving
  • 1/2 cup cheddar cheese shredded, preferably sharp
  • 1/4 cup red onion thinly sliced
  • 1/4 cup green bell pepper sliced

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, sugar-free BBQ sauce, red onion, and green bell pepper. Mix well until everything is evenly coated.
  3. Transfer mixture to an 8x8-inch baking dish and spread into an even layer.
  4. Sprinkle shredded cheddar cheese evenly over the top, covering the entire surface.
  5. Bake for 20 minutes until cheese is melted, bubbly, and lightly golden at the edges.
  6. Let rest for 5 minutes before serving to allow sauce to thicken slightly.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezes well for up to 3 months. Reheat in oven at 350°F for best texture, or microwave at 50% power. Pairs wonderfully with cauliflower rice, green salad, or roasted vegetables.
