Method
- Preheat oven to 415°F (213°C). Line baking dish with aluminum foil.
- In a small bowl, mix baking powder, garlic powder, onion powder, salt, pepper, paprika, oregano, and thyme.
- Pat chicken thighs dry. Lift the skin, keeping it attached on one side.
- Place thighs skin-side down. Season bottoms. Flip and season tops. Fold skin back and season skin.
- Add butter pieces around the chicken in the dish.
- Bake for 40 minutes until internal temp reaches 165°F (74°C) and skin is crispy.
- Let rest 5–10 minutes before serving.
Notes
Dry chicken before seasoning for crispiness. Use baking powder, not soda. High heat is essential. Season under the skin for flavor.
