Easy Oven Baked Chicken Thighs

Ingredients
  

  • 6 chicken thighs bone-in, skin-on
  • 3 tbsp butter cut into pieces
  • 1 tbsp baking powder
  • 2 tsp garlic powder
  • 2 tsp paprika or smoked paprika
  • 2 tsp onion powder
  • 1.5 tsp kosher salt
  • 0.75 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.25 tsp dried thyme

Method
 

  1. Preheat oven to 415°F (213°C). Line baking dish with aluminum foil.
  2. In a small bowl, mix baking powder, garlic powder, onion powder, salt, pepper, paprika, oregano, and thyme.
  3. Pat chicken thighs dry. Lift the skin, keeping it attached on one side.
  4. Place thighs skin-side down. Season bottoms. Flip and season tops. Fold skin back and season skin.
  5. Add butter pieces around the chicken in the dish.
  6. Bake for 40 minutes until internal temp reaches 165°F (74°C) and skin is crispy.
  7. Let rest 5–10 minutes before serving.

Notes

Dry chicken before seasoning for crispiness. Use baking powder, not soda. High heat is essential. Season under the skin for flavor.
