Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs or 1/2 cup unsweetened applesauce for egg substitute
  • 1/4 cup water
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugars, baking soda, baking powder, salt, and spices.
  3. Combine Wet Ingredients: In another bowl, mix the pumpkin puree, oil, eggs (or applesauce), water, and vanilla extract until well combined.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Prepare the Pan: Grease a 9x5-inch loaf pan and pour the batter into it.
  6. Bake: Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
