Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes prepared from about 3 large potatoes
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, cook ground beef over medium heat until browned; drain excess fat.
  3. Add chopped onion and minced garlic to the skillet; cook until softened, about 3-4 minutes.
  4. Stir in frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper.
  5. Simmer the mixture for 5-7 minutes until slightly thickened.
  6. Transfer the beef mixture to a casserole dish, spreading evenly.
  7. Top with prepared mashed potatoes, spreading to cover the filling completely.
  8. Dot the mashed potatoes with butter and sprinkle with shredded cheddar cheese if using.
  9. Bake in the preheated oven for 20-30 minutes until the top is golden and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

For extra flavor, use homemade mashed potatoes with cream and butter. You can substitute ground lamb for beef to make a traditional shepherd's pie. Can assemble up to a day in advance, cover tightly and refrigerate. Add a few extra minutes to baking time if baking from refrigerated. Leftovers reheat well and make great next-day meals.
