- In large stock pot add olive oil over medium heat and sauté onions, celery and garlic for 4-5 minutes until translucent.
- Add salt and pepper, then stir in diced potato and sliced carrots.
- Add corn, peas, green beans, and diced tomatoes, stirring to combine.
- Pour in chicken broth and V-8 juice, then bring to a boil.
- Reduce heat to low and simmer for 30 minutes until vegetables are tender.
- Taste and adjust seasonings as needed before serving.
Notes
Can substitute any vegetables based on availability. V-8 juice adds extra vegetable flavor depth. Store leftovers in refrigerator up to 4 days or freeze up to 3 months.
