Ingredients
  

  • 1/4 cup olive oil
  • 1 yellow onion diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 2 teaspoons kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 large potato peeled and diced
  • 2 carrots sliced
  • 1 cup corn
  • 1 cup peas
  • 1 cup green beans chopped
  • 2 vine tomatoes diced
  • 4 cups chicken broth
  • 2 cups V-8 juice

Equipment

Method
 

  1. In large stock pot add olive oil over medium heat and sauté onions, celery and garlic for 4-5 minutes until translucent.
  2. Add salt and pepper, then stir in diced potato and sliced carrots.
  3. Add corn, peas, green beans, and diced tomatoes, stirring to combine.
  4. Pour in chicken broth and V-8 juice, then bring to a boil.
  5. Reduce heat to low and simmer for 30 minutes until vegetables are tender.
  6. Taste and adjust seasonings as needed before serving.

Notes

Can substitute any vegetables based on availability. V-8 juice adds extra vegetable flavor depth. Store leftovers in refrigerator up to 4 days or freeze up to 3 months.
