Instructions
 

  • Gather all your ingredients: egg whites, olive oil, salt, pepper, diced avocado, fresh salsa, and chopped cilantro.
  • In a medium-sized bowl, whisk the egg whites until frothy. Season with a pinch of salt and pepper.
  • Heat a non-stick skillet over medium heat and add the olive oil. Once hot, pour in the whisked egg whites and tilt the pan to spread evenly.
  • Cook for about 2-3 minutes until the edges start to set, then carefully flip the omelet and cook for an additional 1-2 minutes until fully cooked.
  • Transfer the omelet to a plate and layer it with diced avocado and fresh salsa.
  • Fold the omelet in half to enclose the avocado and salsa. Garnish with chopped cilantro if desired.
