Method
 

  1. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Set aside.

  7. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
  8. In a small bowl, mix together the sour cream, sugar, and vanilla extract until smooth.
  9. Once the cheesecake is set, spread the sour cream mixture evenly over the top of the cheesecake.
  10. If desired, top with fresh fruit or your favorite fruit topping.
  11. Carefully release the sides of the springform pan. Slice the cheesecake into wedges and serve chilled.
