- In a medium-sized bowl, combine the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until evenly coated.
- In a large bowl, mix together the shredded cabbage, grated carrots, mayonnaise, lime juice, honey, salt, and pepper until well combined. Adjust seasoning to taste.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
- Warm the tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a generous amount of creamy slaw on each tortilla, followed by the cooked shrimp. Garnish with chopped cilantro.
- Serve immediately with lime wedges and your choice of toppings.
