French Dip Tortilla Roll Ups

Ingredients
  

  • 1 lb thinly sliced roast beef deli style or leftover
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 2 cups beef broth for au jus
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder for au jus
  • 1 teaspoon garlic powder for au jus
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Lay tortillas flat and layer sliced roast beef and shredded cheese down the center of each, leaving about an inch of space on each end.
  3. Roll tortillas tightly and place seam-side down on the baking sheet.
  4. Brush with melted butter and sprinkle with garlic powder, onion powder, and parsley.
  5. Bake for 12 to 15 minutes, or until tortillas are golden and cheese is melted.
  6. While baking, prepare au jus: In a saucepan, combine beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper. Simmer for 5 to 7 minutes.
  7. Remove roll ups from oven, slice into 2 to 3 inch pieces, and serve warm with au jus for dipping.

Notes

Roll tortillas tightly to prevent them from opening during baking. Place seam-side down to keep them closed. Don't overfill tortillas or they'll be difficult to roll. Store cooked roll ups in airtight container for up to 3 days. Reheat in oven at 350°F for 8 to 10 minutes to restore crispiness. Store au jus separately for up to 4 days.
