Fresh Winter Salad Bowl

This winter salad is a blend of mixed greens, oranges, pomegranate, feta cheese and candied pecans, all tossed in a homemade honey-Dijon dressing. An easy and festive salad perfect for holiday menus.

Ingredients
  

  • 7 cups mixed spring greens
  • 1.25 cups orange segments mandarin oranges, clementines or tangerines
  • 0.5 cup pomegranate seeds can substitute dried cranberries
  • 0.5 cup feta cheese crumbled
  • 0.5 cup candied pecans roughly chopped
  • 0.33 cup olive oil for dressing
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon shallot minced
  • Salt and pepper to taste

Method
 

  1. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, salt and pepper until smooth and emulsified.
  2. Place mixed spring greens in a large serving bowl.
  3. Add orange segments, pomegranate seeds, crumbled feta cheese and chopped candied pecans to the bowl with greens.
  4. Drizzle desired amount of dressing over the salad mixture.
  5. Gently toss to coat all ingredients evenly. Serve immediately for best results.

Notes

For best results, use fresh oranges and crumble feta cheese yourself. Dressing can be made up to 3 days in advance and stored in the refrigerator. Shake well before using. Assemble salad just before serving to maintain freshness and crunch.
