- Heat a skillet over medium heat. Add the butter and let it melt.
- Place the bologna slices in the skillet. Cook for about 2-3 minutes on each side until they are browned and slightly crispy. If desired, make a small slit in the bologna slices to prevent them from curling up.
- While the bologna is frying, toast the bread slices in a toaster or on a separate skillet until golden brown.
- Spread mayonnaise on one slice of toasted bread and mustard on the other.
- Place the fried bologna on the mayonnaise side, followed by the slice of cheese. If using, add lettuce, tomato slices, and pickles on top of the cheese.
- Close the sandwich with the other slice of bread.
- For an extra crispy sandwich, return the assembled sandwich to the skillet and grill it for an additional 2-3 minutes on each side until the bread is golden brown and the cheese is melted.
