Method
- Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round cake pan.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, mix the wet ingredients: melted butter, eggs, vanilla extract, and buttermilk. Stir until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
- Carefully stir in the boiling water and dark chocolate chips. The batter will be thin.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the ganache, heat the heavy cream in a saucepan over medium heat until it simmers. Remove from heat and add the chopped dark chocolate and butter. Let sit for a few minutes, then whisk until smooth.
- Once the cake is completely cool, pour the ganache over the top, allowing it to drip down the sides.
- Slice and serve the cake, optionally garnished with fresh berries or whipped cream.
