Ingredients
  

  • 200 g Digestive biscuits Finely crushed
  • 100 g Butter Melted
  • 300 g Cream cheese Softened
  • 100 g Icing sugar
  • 1 tsp Vanilla extract
  • 300 ml Double cream
  • 200 g Galaxy chocolate Finely chopped and melted
  • Whipped cream For decoration
  • Galaxy chocolate pieces For decoration
  • Galaxy Minstrels For decoration

  • 20cm (8-inch) deep springform tin

Method
 

  1. Crush biscuits into fine crumbs and mix with melted butter. Press into the base of a springform tin. Chill while preparing filling.
  2. Melt Galaxy chocolate using a double boiler or microwave at 50% power. Let cool slightly.
  3. In a large bowl, beat cream cheese, icing sugar, and vanilla extract until smooth.
  4. In a separate bowl, whip double cream until soft peaks form.
  5. Fold melted chocolate into the cream cheese mixture until smooth. Gently fold in whipped cream.
  6. Pour filling over the biscuit base and smooth the top. Chill for 5–6 hours or overnight until set.
  7. Remove from tin and decorate with whipped cream, Galaxy chocolate pieces, and Galaxy Minstrels before serving.

Notes

For the best texture, chill overnight before serving. Try Galaxy caramel or dark chocolate for variation. Store in fridge for up to 3 days or freeze up to 1 month (slice before freezing). Thaw overnight in fridge.
