  • 1/2 cup shredded cheese (cheddar or mozzarella)
Sweet Pancakes Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Fresh berries (for serving)
  • Maple syrup (for serving)
Fruit Salad Ingredients
  • 2 cups mixed fresh fruit (such as strawberries, blueberries, and kiwi)
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Fresh mint leaves (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Sauté the onion and bell pepper in olive oil until softened, then add spinach and cherry tomatoes.
  4. Pour the egg mixture over the vegetables, sprinkle cheese on top, and bake for 15-20 minutes.
  5. Mix the dry ingredients for pancakes in one bowl and the wet ingredients in another.
  6. Combine wet and dry ingredients, then cook pancakes on a skillet until golden brown.
  7. Combine mixed fruit, honey, and lime juice for the fruit salad.
  8. Serve the frittata, pancakes, and fruit salad together, garnished with mint leaves.
