  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheese (cheddar or mozzarella)

Sweet Pancakes Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Fresh berries (for serving)
  • Maple syrup (for serving)

Fruit Salad Ingredients

  • 2 cups mixed fresh fruit (such as strawberries, blueberries, and kiwi)
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Fresh mint leaves (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  • Sauté the onion and bell pepper in olive oil until softened, then add spinach and cherry tomatoes.
  • Pour the egg mixture over the vegetables, sprinkle cheese on top, and bake for 15-20 minutes.
  • Mix the dry ingredients for pancakes in one bowl and the wet ingredients in another.
  • Combine wet and dry ingredients, then cook pancakes on a skillet until golden brown.
  • Combine mixed fruit, honey, and lime juice for the fruit salad.
  • Serve the frittata, pancakes, and fruit salad together, garnished with mint leaves.
