Instructions
 

  • In a large bowl, whisk together the dry ingredients for pancakes: flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the wet ingredients: buttermilk, egg, melted butter, and vanilla extract. Combine the wet mixture with the dry ingredients and stir gently until just combined.
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  • Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  • For the waffles, whisk together the dry ingredients: flour, sugar, baking powder, and salt in a large bowl.
  • In another bowl, whisk together the wet ingredients: milk, vegetable oil, eggs, and vanilla extract. Combine the wet mixture with the dry ingredients and stir until just combined.
  • Preheat your waffle iron according to the manufacturer’s instructions. Pour the appropriate amount of batter onto the preheated waffle iron and cook until golden brown, about 4-5 minutes.
  • Serve pancakes and waffles warm with your choice of toppings such as maple syrup, fresh berries, whipped cream, and powdered sugar.
