- Prepare the beef stew meat by cutting it into bite-sized pieces and placing it in a large bowl.
- Halve the baby potatoes and add them to the bowl with the beef.
- Season the beef with salt and pepper, tossing to coat evenly.
- In a small bowl, combine melted butter, minced garlic, dried thyme, and dried rosemary. Stir well.
- Layer the chopped onion at the bottom of the slow cooker.
- Add the seasoned beef on top of the onions, followed by the halved baby potatoes.
- Pour the garlic butter mixture over the beef and potatoes, ensuring everything is well coated.
- Pour the beef broth into the slow cooker, cover, and set to cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, garnish with fresh parsley before serving.
