Method
- Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat until shimmering. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add unsalted butter. Once melted, add minced garlic and sliced mushrooms. Sauté for about 5-7 minutes until mushrooms are browned and tender.
- Stir in fresh thyme and cook for an additional minute. Pour in chicken broth, scraping the bottom of the skillet to release browned bits. Bring to a simmer and let cook for 2-3 minutes until slightly reduced.
- Return the seared pork chops to the skillet, spoon the mushroom sauce over them, and cook for an additional 2 minutes to heat through.
- Garnish with chopped fresh parsley before serving.
