Method
 

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat until shimmering. Add the seasoned pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove from skillet and set aside.
  3. In the same skillet, reduce heat to medium and add unsalted butter. Once melted, add minced garlic and sliced mushrooms. Sauté for about 5-7 minutes until mushrooms are browned and tender.
  4. Stir in fresh thyme and cook for an additional minute. Pour in chicken broth, scraping the bottom of the skillet to release browned bits. Bring to a simmer and let cook for 2-3 minutes until slightly reduced.
  5. Return the seared pork chops to the skillet, spoon the mushroom sauce over them, and cook for an additional 2 minutes to heat through.
  6. Garnish with chopped fresh parsley before serving.
