Ingredients
  

  • 1 lb sirloin or ribeye steak cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 3 tablespoons unsalted butter
  • Salt and pepper to taste
  • chopped fresh parsley optional, for garnish
  • 1 tablespoon unsalted butter for Parmesan cream sauce
  • 2 cloves garlic finely minced, for sauce
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste, for sauce
  • pinch red pepper flakes optional

Equipment

Method
 

  1. Pat steak cubes dry with paper towels and season generously with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add steak cubes in a single layer, working in batches if needed. Sear for 2-3 minutes per side until golden-brown crust forms. Remove to a plate and set aside.
  4. Reduce heat to medium. In the same skillet, melt 3 tablespoons butter. Add 4 cloves minced garlic and sauté for about 30 seconds until fragrant.
  5. Return steak bites to the skillet and toss to coat in garlic butter.
  6. For the Parmesan cream sauce: In a separate saucepan over medium heat, melt 1 tablespoon butter. Add 2 cloves minced garlic and sauté for 30 seconds.
  7. Add heavy cream and bring to a gentle simmer. Stir in freshly grated Parmesan cheese until smooth.
  8. Season sauce with salt, black pepper, and optional red pepper flakes to taste.
  9. Pour sauce over steak bites or serve on the side. Garnish with fresh parsley and serve immediately.

Notes

Pat steak cubes dry before seasoning for better searing. Work in batches when searing to avoid overcrowding the pan. Sauté garlic only until fragrant (about 30 seconds) to prevent burning. Use freshly grated Parmesan cheese for best results.
