Ingredients
  

  • 1 pound steak sirloin or ribeye preferred, cut into bite-sized pieces
  • 8 ounces mushrooms cremini or button, sliced
  • 4 tablespoons unsalted butter divided
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons fresh herbs thyme or parsley, optional

Method
 

  1. Let the steak sit at room temperature for 30 minutes before cooking. Pat steak dry with paper towels.
  2. Heat large skillet over medium-high heat and add olive oil. Once hot, carefully place steak bites in the pan without overcrowding.
  3. Let cook undisturbed for 2-3 minutes to develop a sear, then flip. Cook to desired doneness (130°F for medium-rare). Remove steak from skillet and set aside.
  4. In the same skillet, add 2 tablespoons butter and toss in mushrooms. Cook mushrooms for 5-7 minutes until golden brown and tender, seasoning with salt and pepper.
  5. Add minced garlic to the skillet and cook for about 1 minute until fragrant.
  6. Return steak bites to the skillet along with remaining 2 tablespoons butter. Stir everything together until butter melts and coats the steak and mushrooms.
  7. Add fresh herbs if desired. Serve immediately.

Notes

Choose cuts with good marbling for best results. Don't overcrowd the pan when searing steak. Let steak rest for 5 minutes after cooking. Garlic burns easily, so add it near the end.
