- Let the steak sit at room temperature for 30 minutes before cooking. Pat steak dry with paper towels.
- Heat large skillet over medium-high heat and add olive oil. Once hot, carefully place steak bites in the pan without overcrowding.
- Let cook undisturbed for 2-3 minutes to develop a sear, then flip. Cook to desired doneness (130°F for medium-rare). Remove steak from skillet and set aside.
- In the same skillet, add 2 tablespoons butter and toss in mushrooms. Cook mushrooms for 5-7 minutes until golden brown and tender, seasoning with salt and pepper.
- Add minced garlic to the skillet and cook for about 1 minute until fragrant.
- Return steak bites to the skillet along with remaining 2 tablespoons butter. Stir everything together until butter melts and coats the steak and mushrooms.
- Add fresh herbs if desired. Serve immediately.
Notes
Choose cuts with good marbling for best results. Don't overcrowd the pan when searing steak. Let steak rest for 5 minutes after cooking. Garlic burns easily, so add it near the end.
