Ingredients

  • 1 lb beef steak sirloin or ribeye, cut into 1-inch bite-sized pieces
  • 4 cloves garlic minced
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 0.75 cup Parmesan cheese freshly grated
  • salt and black pepper to taste

Equipment

  • large skillet
  • meat thermometer
  • Paper towels

Method

  1. Season steak pieces with salt and pepper. Let rest at room temperature for even cooking.
  2. Heat 2 tablespoons butter in a skillet over medium-high. Add half the steak bites, sear 3–4 minutes per side until golden brown. Remove and cover loosely.
  3. Repeat with remaining steak bites, avoiding overcrowding.
  4. Melt remaining butter in skillet. Add garlic and sauté 30 seconds, scraping browned bits from pan.
  5. Add heavy cream and simmer 3–5 minutes until slightly thickened.
  6. Gradually stir in Parmesan until smooth. Adjust seasoning to taste.
  7. Return steak bites to skillet. Toss gently in sauce, heat briefly, and serve immediately.

Notes

Use ribeye or sirloin with good marbling for tenderness. Don’t overcrowd the pan—batch searing gives the best crust. Fresh garlic and freshly grated Parmesan are essential for rich flavor. Serve immediately while sauce is creamy.
