Ingredients

  • 1 lb sirloin or ribeye steak cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 3 tablespoons unsalted butter
  • Salt and pepper to taste
  • Chopped fresh parsley optional, for garnish
  • 1 tablespoon unsalted butter for sauce
  • 2 cloves garlic finely minced, for sauce
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste, for sauce
  • Red pepper flakes optional, pinch

Equipment

  • large skillet
  • Separate saucepan

Method

  1. Pat steak cubes dry with paper towels and season generously with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in batches, searing for 2 to 3 minutes per side until browned. Remove from pan and set aside.
  3. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and saute until fragrant, about 30 seconds.
  4. Return steak bites to the pan and toss to coat in the garlic butter.
  5. In a separate saucepan, melt butter over medium heat and saute garlic for 30 seconds. Add heavy cream and bring to a gentle simmer.
  6. Stir in freshly grated Parmesan cheese until the sauce is smooth and creamy. Season with salt, black pepper, and red pepper flakes if using.
  7. Pour the Parmesan cream sauce over the steak bites or serve on the side. Garnish with fresh parsley and serve immediately.

Notes

Use sirloin or ribeye for best results. Pat steak dry before seasoning for better searing. Sear steak in batches to avoid overcrowding. Use freshly grated Parmesan for smoother sauce. Add sauteed mushrooms, spinach, or bacon for extra flavor. Red pepper flakes add a nice kick to the cream sauce.
