Garlic Butter Steak Bites with Zucchini

Ingredients
  

  • 1 lb steak (sirloin, ribeye, or New York strip) cut into 1-inch cubes
  • 1 medium zucchini cut into half-moon slices
  • 3 tbsp butter unsalted recommended
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • fresh parsley optional, chopped, for garnish

Method
 

  1. Pat steak bites dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add steak bites in a single layer. Sear 1 to 2 minutes per side until golden brown. Remove and set aside.
  4. Lower heat to medium. Add butter. Once melted, add minced garlic and stir constantly for 30 seconds until fragrant. Do not let it burn.
  5. Add zucchini half-moons. Cook 3 to 5 minutes, stirring occasionally, until tender-crisp.
  6. Return steak bites to the skillet. Toss to coat everything in the garlic butter sauce.
  7. Cook 1 to 2 more minutes until steak is heated through. Garnish with parsley and serve immediately.

Notes

Cook steak in batches if the pan is crowded. Substitute zucchini with broccoli, bell peppers, or asparagus. Adjust vegetable cook time accordingly. Add red pepper flakes for a spicy version.
