- Activate the yeast by combining warm water, sugar, and active dry yeast in a small bowl. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough forms.
- Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place in a greased baking dish.
- Mix minced garlic, parsley, rosemary, and thyme in a small bowl. Sprinkle this mixture over the shaped rolls.
- Cover the rolls with a cloth and let them rise for another 30 minutes.
- Preheat the oven to 375°F (190°C). Brush the tops of the rolls with melted butter and bake for 20-25 minutes until golden brown.
- Remove from the oven and let cool slightly before serving.
