Ingredients
  

  • 2 pieces halibut fillets 1 inch thick
  • 2 tablespoons butter softened
  • 2 tablespoons mayonnaise
  • 1/4 cup Parmesan cheese freshly grated
  • 2 tablespoons green onion chopped
  • 2 cloves garlic crushed
  • 1 dash Tabasco sauce
  • 1/2 tablespoon lemon juice plus extra for seasoning fish
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat the oven to 450°F. Season each halibut fillet with salt, pepper, and a squeeze of lemon juice, then place in a baking dish.
  2. Bake the halibut fillets for 6 minutes.
  3. While the fish bakes, combine softened butter, mayonnaise, grated Parmesan cheese, chopped green onion, crushed garlic, Tabasco, 1/2 tablespoon lemon juice, and salt and pepper to taste in a bowl. Mix until creamy and well combined.
  4. Remove the fillets from the oven and spread the Parmesan mixture generously over the top of each piece.
  5. Switch oven to broil. Return the baking dish to the oven and broil for 2-3 minutes, watching carefully, until the topping is lightly browned and bubbly.
  6. Serve immediately with rice and vegetables. Optional: garnish with fresh parsley for added color and freshness.

Notes

Use halibut fillets that are evenly sized and 1 inch thick for best results. Watch closely during broiling to prevent burning. Freshly grated Parmesan cheese provides superior flavor and texture compared to pre-grated varieties.
