Ingredients
  

For the Chicken

  • 4 pieces Boneless skinless chicken breasts (or thighs) Provides the main protein for the dish.
  • 1 teaspoon Italian seasoning Adds a blend of herbs for flavor.
  • 1/2 teaspoon Smoked paprika Gives a subtle smokiness.
  • 1/2 teaspoon Salt Enhances flavor.

  • 1 tablespoon Olive oil Used to coat the chicken.

For the Potatoes

  • 1.5 pounds Baby Yukon Gold or red potatoes, halved Provides a hearty side.
  • 3 tablespoons Olive oil Used to coat the potatoes.
  • 4 cloves Garlic, minced Adds a strong flavor.
  • 1/3 cup Grated Parmesan cheese Provides a cheesy flavor.
  • 1/2 teaspoon Salt Enhances flavor.
  • 1/4 teaspoon Black pepper Adds a bit of heat.

Optional Garnish

  • 1 tablespoon Chopped fresh parsley For garnish and added flavor.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken dry with paper towels. In a small bowl, mix together Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken with olive oil and sprinkle the seasoning mixture over it, ensuring it's well-coated.
  • In a large bowl, add the halved potatoes. Drizzle with olive oil, then add minced garlic, grated Parmesan cheese, salt, and black pepper. Toss until the potatoes are evenly coated.
  • Line a baking sheet with parchment paper. Place the seasoned chicken on one side and the seasoned potatoes on the other side in a single layer.
  • Roast in the preheated oven for about 25-30 minutes, flipping the potatoes halfway through. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  • For an extra touch, sprinkle additional Parmesan cheese over the chicken and potatoes during the last 5 minutes of cooking and broil for a few minutes until golden.
  • Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley if desired.
