- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels. In a small bowl, mix together Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken with olive oil and sprinkle the seasoning mixture over it, ensuring it's well-coated.
- In a large bowl, add the halved potatoes. Drizzle with olive oil, then add minced garlic, grated Parmesan cheese, salt, and black pepper. Toss until the potatoes are evenly coated.
- Line a baking sheet with parchment paper. Place the seasoned chicken on one side and the seasoned potatoes on the other side in a single layer.
- Roast in the preheated oven for about 25-30 minutes, flipping the potatoes halfway through. Ensure the chicken reaches an internal temperature of 165°F (74°C).
- For an extra touch, sprinkle additional Parmesan cheese over the chicken and potatoes during the last 5 minutes of cooking and broil for a few minutes until golden.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley if desired.
