Ingredients
  

  • 1 pound large shrimp peeled and deveined (16-20 count)
  • 4 tablespoons unsalted butter or olive oil for lighter option
  • 4 cloves garlic minced
  • 1 teaspoon lemon juice fresh squeezed preferred
  • 1/2 cup grated Parmesan cheese freshly grated for best results
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the shrimp with minced garlic, lemon juice, and a pinch of salt and pepper. Toss well to coat evenly.
  3. In a small saucepan, melt the butter over low heat. Once melted, remove from heat and stir in half of the Parmesan cheese (1/4 cup).
  4. Pour the butter and cheese mixture over the shrimp and toss until all pieces are well coated.
  5. Spread the shrimp in a single layer on the prepared baking sheet, making sure they don't overlap.
  6. Roast in the preheated oven for 8-10 minutes, or until shrimp turn pink and opaque. Watch carefully to avoid overcooking.
  7. Remove from oven and immediately sprinkle with remaining Parmesan cheese and fresh parsley.
  8. Serve immediately with crusty bread, over pasta, or with your favorite side dishes.

Notes

For dairy-free version, substitute nutritional yeast for Parmesan. Can add vegetables like zucchini or bell peppers to the roasting pan. If using frozen shrimp, thaw completely and pat very dry before cooking.
