Ingredients
  

  • 4 fillets cod 6 oz each
  • 1/4 cup soy sauce use light soy sauce for milder flavor
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger grated
  • 2 cloves garlic minced
  • 1 tablespoon sesame oil
  • 2 green onions thinly sliced, for garnish
  • 1 tablespoon sesame seeds for garnish
  • fresh cilantro chopped, for garnish
  • lime wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil until smooth.
  3. Place cod fillets on prepared baking sheet.
  4. Brush glaze generously over each fillet. For deeper flavor, marinate 30–60 minutes beforehand.
  5. Bake for 12–15 minutes or until cod is opaque and flakes easily with a fork.
  6. Transfer to plates. Garnish with green onions, sesame seeds, and chopped cilantro.
  7. Serve with lime wedges and your favorite sides.

Notes

For crisp texture, sear cod in a hot skillet before baking. You can also pan-sear (3–4 minutes/side) or grill (3–4 minutes/side). Store leftovers in the fridge for 3 days. Reheat gently to 165°F. Perfect with rice, steamed vegetables, or salad.
