- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil until smooth.
- Place cod fillets on prepared baking sheet.
- Brush glaze generously over each fillet. For deeper flavor, marinate 30–60 minutes beforehand.
- Bake for 12–15 minutes or until cod is opaque and flakes easily with a fork.
- Transfer to plates. Garnish with green onions, sesame seeds, and chopped cilantro.
- Serve with lime wedges and your favorite sides.
Notes
For crisp texture, sear cod in a hot skillet before baking. You can also pan-sear (3–4 minutes/side) or grill (3–4 minutes/side). Store leftovers in the fridge for 3 days. Reheat gently to 165°F. Perfect with rice, steamed vegetables, or salad.
