- Segment the grapefruits by cutting off the top and bottom, removing the peel and pith, and cutting between the membranes to release the segments. Place in a large bowl.
- In a small bowl, whisk together honey, lime juice, salt, and black pepper to make the dressing.
- Pour the dressing over the grapefruit segments and gently toss to coat. Add chopped mint leaves and feta cheese if using, and mix gently.
- Serve immediately, either chilled or at room temperature.
Notes
Use fresh ingredients for the best flavor. Prepare the salad just before serving to keep the mint vibrant.
