- In a large bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and pepper until well mixed.
- Place chicken thighs in a resealable bag or shallow dish. Pour marinade over the chicken, ensuring it is fully coated. Marinate in the fridge for at least 30 minutes.
- Preheat grill or skillet to medium high heat. Remove chicken from marinade, letting excess drip off. Cook for 5 to 7 minutes per side, or until internal temperature reaches 165 degrees F.
- Transfer chicken to a cutting board and let rest for a few minutes before slicing into thin strips.
- In serving bowls, place a scoop of cooked rice. Layer with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Drizzle with tzatziki sauce and sprinkle with fresh parsley before serving.
