Greek Chicken with Lemon and Feta

Ingredients
  

  • 1 lemon juiced and zested
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves finely minced (or 1 tsp dried garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt plus a pinch
  • 1/4 tsp coarse black pepper
  • 1 lb thin-sliced chicken breast
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • additional lemon wedges for garnish

Method
 

  1. In a large mixing bowl, combine the lemon zest and juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Whisk until the mixture is well emulsified. Set aside 1/4 cup of this marinade for later.
  2. Add the thin-sliced chicken breast to the mixing bowl with the remaining marinade. Use tongs to coat each piece thoroughly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to deepen flavors.
  3. Heat a nonstick skillet over medium-high heat. Once hot, add a drizzle of olive oil and place the marinated chicken into the skillet. Cook until the bottom is a golden brown, about 4 to 5 minutes.
  4. Flip the chicken and continue to cook for another 3 to 4 minutes or until the chicken is cooked through and the juices run clear when sliced.
  5. Transfer the cooked chicken to a serving plate and drizzle the reserved marinade over the top. Sprinkle with fresh chopped parsley and crumbled feta cheese.
  6. Serve with additional lemon wedges, and enjoy your flavorful Greek chicken.

Notes

Reserve 1/4 cup marinade before adding chicken for food safety. Marinate for 30 minutes minimum (up to 2 hours for more intense flavor). Use thin-sliced chicken breast for faster, even cooking.
