Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

STEP 1: MARINATE THE CHICKEN
  1. Prepare Marinade: In a bowl, mix together the Greek yogurt, olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until well combined.
  2. Coat Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.
STEP 2: COOK THE CHICKEN
  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Bake Chicken: Remove the chicken from the marinade and place it on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  3. Rest Chicken: Once cooked, remove the chicken from the oven and let it rest for 5 minutes before slicing.
STEP 3: SERVE
  1. Garnish: Slice the chicken and serve it on a platter. Drizzle with any remaining marinade and sprinkle with fresh parsley for a pop of color.
