Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley

Method
 

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper on both sides.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F.
  4. In a separate pot, steam the broccoli florets until tender, about 5 minutes.
  5. In a bowl, mix Greek yogurt, minced garlic, lemon juice, and dried parsley to create the creamy garlic sauce.
  6. Slice the grilled chicken and serve it over the steamed broccoli.
  7. Drizzle the creamy garlic sauce over the chicken and broccoli before serving.

Notes

For added flavor, marinate the chicken in olive oil and spices for at least 30 minutes before grilling. Feel free to add other vegetables like bell peppers or carrots. This dish can be served warm or cold as a meal prep option.
