Ingredients
  

Chicken Marinade
  • 1 pound Boneless, skinless chicken breasts The main protein for the tacos.

  • 8 small Corn or flour tortillas For wrapping the grilled chicken.
Lime Cilantro Salsa
  • 1 cup Fresh cilantro, chopped Adds freshness to the salsa.
  • 1/2 medium Red onion, finely chopped Provides crunch and flavor.
  • 1 medium Jalapeño, seeded and minced Adds heat to the salsa.
  • 1 lime, juiced Lime juice Brightens the salsa.

Method
 

  1. In a medium bowl, mix together olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper to create the marinade.
  2. Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat the grill to medium-high heat for about 10-15 minutes. Clean the grill grates with a grill brush.
  4. Remove the marinated chicken from the refrigerator and place it on the preheated grill. Cook for 6-7 minutes on one side without moving.
  5. Flip the chicken and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  7. While the chicken is resting, warm the tortillas on the grill for about 30 seconds on each side.
  8. Assemble the tacos by placing a few strips of grilled chicken in each tortilla and topping with Lime Cilantro Salsa.
  9. Serve with extra lime wedges for squeezing over the tacos.
