- Rinse the shrimp under cold water and pat dry with a paper towel.
- In a mixing bowl, combine parsley, cilantro, minced garlic, and red pepper flakes to make the chimichurri sauce. Add olive oil and red wine vinegar, then stir until well combined. Season with salt and pepper to taste.
- In a large bowl, add shrimp, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat the shrimp evenly and let marinate for at least 15 minutes.
- If using wooden skewers, soak them in water for 30 minutes. Thread marinated shrimp onto skewers, about 4-5 shrimp per skewer.
- Preheat the grill to medium-high heat. Grill the shrimp skewers for 2-3 minutes on each side until they turn pink and opaque.
- Remove skewers from the grill and let them rest for a minute before serving with chimichurri sauce and lemon wedges.
