- In a bowl, mix olive oil, lime juice, garlic, cumin, paprika, salt, pepper, and chili powder (if using) to create the marinade.
- Place the beef steak into the marinade and refrigerate for at least 30 minutes, ideally 2 hours.
- Preheat the grill to high heat.
- Grill the marinated steak for 4-6 minutes per side, depending on thickness, until desired doneness is achieved. Let the steak rest for 5 minutes after grilling.
- Warm the tortillas on the grill or in a pan until lightly browned and warm.
- Slice the steak thinly against the grain.
- Assemble the tacos by placing sliced steak on each tortilla, then top with cilantro, onions, tomatoes, and avocado slices.
- Serve the tacos with lime wedges on the side.
