- Marinate the steak by mixing olive oil, paprika, cumin, garlic powder, onion powder, salt, and pepper in a bowl. Rub the mixture onto the steak and let it marinate for at least 30 minutes.
- Prepare the corn salsa by combining fresh corn, diced red onion, diced red bell pepper, jalapeño (if using), lime juice, chopped cilantro, salt, and pepper in a medium bowl. Mix gently and set aside.
- Preheat the grill to high heat. Grill the marinated steak for about 4 to 6 minutes on each side, depending on thickness and desired doneness. Use a meat thermometer to check for doneness (medium-rare is 130°F/54°C).
- Remove the steak from the grill and let it rest for 5 minutes. Slice the steak into thin strips.
- Warm the tortillas on the grill or in a skillet until slightly browned. Assemble the tacos by placing sliced steak in the center of each tortilla and topping with corn salsa.
- Serve the tacos on a platter and enjoy with your favorite toppings.
