Steak Ingredients

  • 1 pound Flank steak Rich in flavor and tender when grilled.
  • 2 tablespoons Olive oil For marinating the steak.
  • 2 teaspoons Chili powder Adds spice and flavor to the marinade.
  • 1 teaspoon Cumin Enhances the flavor profile.
  • 1 teaspoon Garlic powder Adds depth to the marinade.

  • 8 small Corn tortillas For serving the tacos.

Creamy Corn Ingredients

  • 2 cups Corn kernels Fresh or frozen, for the creamy topping.
  • 1/4 cup Mayonnaise Adds creaminess to the corn.
  • 1/4 cup Sour cream For a tangy flavor.
  • 1/2 cup Cotija cheese Crumbled, for a salty and creamy texture.
  • 1 teaspoon Chili powder For seasoning the creamy corn.
  • 1 lime Juiced Adds acidity to the corn mixture.
  • to taste Fresh cilantro, chopped For garnish.

Instructions
 

  • In a medium bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
  • Rub the marinade all over the flank steak, ensuring it is well coated. Let it marinate for at least 30 minutes.
  • If using fresh corn, grill or boil it until tender. If using frozen corn, cook according to package instructions.
  • In a large bowl, combine the cooked corn, mayonnaise, sour cream, cotija cheese, chili powder, and lime juice. Stir until well mixed and set aside.
  • Preheat your grill to medium-high heat. Grill the marinated flank steak for about 5-7 minutes on each side for medium-rare.
  • Remove the steak from the grill and let it rest for a few minutes before slicing thinly against the grain.
  • Warm the corn tortillas on the grill for about 30 seconds on each side.
  • Assemble the tacos by placing a few slices of steak on each tortilla and topping with the creamy corn mixture. Garnish with fresh cilantro.
