- In a medium bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
- Rub the marinade all over the flank steak, ensuring it is well coated. Let it marinate for at least 30 minutes.
- If using fresh corn, grill or boil it until tender. If using frozen corn, cook according to package instructions.
- In a large bowl, combine the cooked corn, mayonnaise, sour cream, cotija cheese, chili powder, and lime juice. Stir until well mixed and set aside.
- Preheat your grill to medium-high heat. Grill the marinated flank steak for about 5-7 minutes on each side for medium-rare.
- Remove the steak from the grill and let it rest for a few minutes before slicing thinly against the grain.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing a few slices of steak on each tortilla and topping with the creamy corn mixture. Garnish with fresh cilantro.
