Ingredients

Instructions
 

  • Prepare your ingredients: wash and peel the sweet potatoes, then cut them into small cubes. Dice the onion, mince the garlic, and seed and dice the poblano pepper.
  • Heat a large skillet over medium heat. Add the ground beef and diced onions, cooking for about 10 minutes until browned. Drain any excess fat.
  • Add the cubed sweet potatoes, minced garlic, taco seasoning, water, frozen corn, and diced poblano pepper to the skillet. Stir to combine and cover with a lid. Cook for 12-15 minutes, stirring occasionally.
  • Remove the lid and continue cooking on medium-low heat for an additional 3 minutes to evaporate excess liquid and concentrate flavors. Adjust seasoning if needed.
  • If desired, sprinkle shredded cheese on top and cover for a minute to let it melt. Remove from heat and serve.
