- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion for about 5 minutes until translucent.
- In a greased 9x13 inch baking dish, layer half of the sliced potatoes, half of the diced ham, and half of the sautéed onions. Season with salt, pepper, and garlic powder. Repeat the layers with the remaining ingredients.
- In a mixing bowl, combine the cream of mushroom soup and milk until smooth. Pour this mixture over the layered ingredients in the baking dish.
- Top with shredded cheddar cheese. If using breadcrumbs, mix them with melted butter and sprinkle over the cheese layer.
- Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
- Let the casserole cool for a few minutes before serving. Scoop out portions and enjoy warm.
