Ingredients
  

  • 4 large Bell peppers Any color, for a vibrant presentation.
  • 1 pound Ground turkey Lean meat for a healthy filling.
  • 1 cup Cooked rice White or brown rice adds texture.
  • 1 small Onion Finely chopped for sweetness.
  • 2 cloves Garlic Minced for flavor.
  • 1 can Diced tomatoes 14.5 oz, drained for moisture.
  • 1 teaspoon Italian seasoning Enhances flavor.
  • to taste Salt and pepper Essential for seasoning.
  • 1 cup Shredded mozzarella cheese For topping, adds creaminess.
  • 2 tablespoons Olive oil For sautéing vegetables.
  • to taste Fresh parsley Chopped, for garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove seeds and membranes. Brush the outside with olive oil and place them upright in a baking dish.
  • In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes.
  • Add minced garlic and cook for an additional minute.
  • Add ground turkey to the skillet, breaking it apart. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  • Stir in cooked rice, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes to meld flavors.
  • Stuff each bell pepper with the turkey mixture, packing it down gently. Top with shredded mozzarella cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  • Let the stuffed peppers cool for a few minutes before serving. Garnish with fresh parsley.
