  • 2 cloves Garlic Minced for flavor.
  • 1 can Diced tomatoes 14.5 oz, drained for moisture.
  • 1 teaspoon Italian seasoning Enhances flavor.
  • to taste Salt and pepper Essential for seasoning.
  • 1 cup Shredded mozzarella cheese For topping, adds creaminess.
  • 2 tablespoons Olive oil For sautéing vegetables.

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Brush the outside with olive oil and place them upright in a baking dish.
  3. In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Add ground turkey to the skillet, breaking it apart. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  6. Stir in cooked rice, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes to meld flavors.
  7. Stuff each bell pepper with the turkey mixture, packing it down gently. Top with shredded mozzarella cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  9. Let the stuffed peppers cool for a few minutes before serving. Garnish with fresh parsley.
