- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large mixing bowl, cream together softened butter and sugar until smooth and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually blend in the dry ingredients until the dough comes together. If too crumbly, add milk one tablespoon at a time.
- Divide the dough into two portions, flatten into disks, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out one disk of dough to about 1/4 inch thick.
- Use a heart-shaped cookie cutter to cut out cookies and place them on ungreased baking sheets.
- Bake for 8 to 10 minutes, until the edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to wire racks.
- Once cooled, decorate with royal icing or fondant and add sprinkles as desired.
