Essential Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (10 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions
 

  • Prepare the ingredients by placing the chicken at the bottom of the crockpot, then adding chopped onion and minced garlic on top.
  • Add the black beans, corn, diced tomatoes with green chilies, diced tomatoes, chicken broth, and taco seasoning. Season with salt and pepper.
  • Cover the crockpot and cook on high for 3-4 hours or low for 6-8 hours.
  • After cooking, shred the chicken and return it to the soup, stirring to combine.
  • Serve the soup garnished with fresh cilantro and optional toppings like tortilla chips, sour cream, and shredded cheese.

Notes

This soup can be customized with optional ingredients like bell peppers, jalapeños, lime juice, avocado, cheese, and cilantro.
