Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 large potato diced
  • 1 cup green or brown lentils rinsed
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 14 ounces diced tomatoes canned
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for 5-7 minutes until softened.
  2. Add potatoes, lentils, vegetable broth, smoked paprika, thyme, and diced tomatoes. Stir well.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 30-35 minutes, or until the lentils and potatoes are tender.
  4. Season with salt and pepper to taste before serving.

Notes

Green or brown lentils hold their shape better than red lentils for stews. Serve with crusty bread for the ultimate comfort meal.
