Ingredients
  

Pork and Sauerkraut Ingredients

  • 2 pounds pork shoulder or pork loin Cut into chunks for even cooking and tenderness.
  • 1 tablespoon olive oil For browning the pork.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 teaspoon caraway seeds For flavor.
  • to taste salt and pepper For seasoning.
  • 1 can (14 ounces) sauerkraut Drained and rinsed.
  • 1 cup chicken broth For moisture.
  • 1 medium apple Peeled and sliced.
  • 1 tablespoon brown sugar (optional) For added sweetness.
  • to taste fresh parsley Chopped for garnish.

Instructions
 

  • Heat olive oil in a large pot over medium-high heat. Season pork with salt and pepper, then brown on all sides for 5-7 minutes. Remove and set aside.
  • In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and caraway seeds, cooking for an additional minute.
  • Return browned pork to the pot. Add sauerkraut, chicken broth, sliced apple, and brown sugar (if using). Stir to combine.
  • Bring to a gentle simmer, cover, and reduce heat to low. Cook for 1.5 to 2 hours until pork is tender.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For a healthier version, use lean cuts of pork and low-sodium broth. Feel free to add more vegetables for extra nutrition.
