- Heat olive oil in a large pot over medium-high heat. Season pork with salt and pepper, then brown on all sides for 5-7 minutes. Remove and set aside.
- In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and caraway seeds, cooking for an additional minute.
- Return browned pork to the pot. Add sauerkraut, chicken broth, sliced apple, and brown sugar (if using). Stir to combine.
- Bring to a gentle simmer, cover, and reduce heat to low. Cook for 1.5 to 2 hours until pork is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
For a healthier version, use lean cuts of pork and low-sodium broth. Feel free to add more vegetables for extra nutrition.
