Pork and Sauerkraut Ingredients
  • 2 pounds pork shoulder or pork loin Cut into chunks for even cooking and tenderness.
  • 1 tablespoon olive oil For browning the pork.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 teaspoon caraway seeds For flavor.
  • to taste salt and pepper For seasoning.
  • 1 can (14 ounces) sauerkraut Drained and rinsed.
  • 1 cup chicken broth For moisture.
  • 1 medium apple Peeled and sliced.
  • 1 tablespoon brown sugar (optional) For added sweetness.
  • to taste fresh parsley Chopped for garnish.

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Season pork with salt and pepper, then brown on all sides for 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent (3-4 minutes). Add minced garlic and caraway seeds, cooking for an additional minute.
  3. Return browned pork to the pot. Add sauerkraut, chicken broth, sliced apple, and brown sugar (if using). Stir to combine.
  4. Bring to a gentle simmer, cover, and reduce heat to low. Cook for 1.5 to 2 hours until pork is tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For a healthier version, use lean cuts of pork and low-sodium broth. Feel free to add more vegetables for extra nutrition.
