Instructions
Preheat your oven to 425°F (220°C). Scrub the russet potatoes under running water, dry them, and prick each potato several times with a fork.
Rub each potato with olive oil and sprinkle generously with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sirloin steak pieces, season with salt, pepper, smoked paprika, and Worcestershire sauce. Sear for 3-4 minutes until browned.
In the last minute of cooking, add the minced garlic and stir until fragrant. Remove from heat.
Once the potatoes are baked, let them cool slightly. Cut a slit down the center of each potato and fluff the insides with a fork.
Top each potato with shredded cheddar cheese, a dollop of sour cream, crumbled turkey bacon, and chopped green onions. Season with salt and pepper to taste.
